Mango shrimp salad recipe
A fresh tast of summer (yum!)
Thank you to Leslie Rozenhart for submitting this shrimp salad recipe - it's a gem! We think this one will become a summertime favorite in our household. It's light and fresh but flavorful too. Ingredients - 2 - 3 mangoes
- 1 lime
- 1 medium jicama
- 1/4 English cucumber
- 2 radishes
- 24 large, uncooked shrimp, peeled and deveined
- 1 tbsp Cajun seasoning
- 1 tbsp vegetable oil
- 1 package mixed lettuce OR 1 head of butter lettuce
Honey Lime Dressing - 1 egg yolk
- 2 tbsp white wine vinegar
- 1 tsp fresh lime juice
- 1 1/4 cups canola oil
- 3 tbsp fresh chives
 - 1 tbsp freshly chopped parsley
- 1 tbsp liquid honey
- 1 garlic clove minced or chopped finely
- pinch of salt (optional)
Peel and slice mango. Squeeze the juice from the lime and toss with the mango. Peel and slice jicama and cucumber into strips. Thinly slice the radishes. Coat shrimp with Cajun seasoning and quickly pan fry in oil until just cooked (pink).
Dressing Whisk egg yolk gradually adding vinegar and lime juice. Whisk in canola oil until well incorporated.  Add other ingredients and shake well. (Keep refrigerated) To serve Arrange a bed of lettuce over which you can arrange the mango, radishes, cucumber, and jicama. Top with shrimp and drizzle with dressing. Then enjoy! Serves 6
