We think this one will become a summertime favorite in our household. It's light and fresh but flavorful too.
Honey Lime Dressing
Peel and slice mango. Squeeze the juice from the lime and toss with the mango.
Peel and slice jicama and cucumber into strips. Thinly slice the radishes.
Coat shrimp with Cajun seasoning and quickly pan fry in oil until just cooked (pink).
Whisk egg yolk gradually adding vinegar and lime juice. Whisk in olive oil until well incorporated.
Add other ingredients and shake well. (Keep refrigerated)
Arrange a bed of lettuce over which you can arrange the mango, radishes, cucumber, and jicama. Top with shrimp and drizzle with dressing. Then enjoy!
