Chicken stew - Italian style

Fix-It and Forget It Lightly - Italian Chicken Stew

(by Mary Longnecker, Bethel, PA)
Makes 4 servings of chicken stew - ideal for 5 - 6 quart slow cooker.

2 uncooked boneless, skinless, chicken breast halves cut in 1 1/2" pieces
19 oz. can cannellini beans drained and rinsed
chicken stew15 1/2 oz. can kidney beans, drained and rinsed
14 1/2 oz. can low-sodium diced tomatoes, undrained
1 cup celery chopped
1 cup carrots chopped
2 small garlic cloves, coarsely chopped
1/2 cup dry red wine or chicken broth
3 tbsp tomato paste
1 tbsp sugar
Dried or fresh Italian seasonings

Combine chicken, cannellini beans, kidney beans, tomatoes, celery, carrots, and garlic in slow cooker. Mix well.

In a medium bowl, combine all remaining ingredients. Mix well. Pour over chicken and vegetables. Mix well.

Cover and cook on low 5 - 6 hours, or on high for 3 hours.

Sandra's notes: I didn't add any sugar, plus I didn't have cannellini beans so I substituted chick peas and it worked out fine. This recipe is very easy to make and is great on a cold night!
